What is halva made of?

Everything comes from the land

Ukraine is famous for its never-ending landscapes and rich fertile land. Endless fields in blossom, colored into green, yellow and gold – this is how Ukraine looks like. Here on the open areas of our country the best variety of sunflowers is cultivated. First of all, the farmer plants sunflower seeds, which needs 3 months of solicitous care in order for it to grow up into a mature harvest of seeds. Then the harvest is gathered in, seeds are separated from the plants and put into storage facilities.

The main thing is a good raw material

The supply department of the factory makes an important job – they choose essential harvest, suitable for the product of quality halva. To do this, the department worker takes a sample of small amount of seeds from the farmer, brings it to the factory, where the laboratory studies the sample and defines its richness, fatness, humidity, common medium size, whether the seeds had not been infected by insects, and whether toxic stuff had not been used while the sunflower was being raised.  Only those sunflower seeds that correspond all of the criteria can be used for further production of quality and tasty halva.

How can one clean out this many seeds?

When the sunflower seeds are brought to the factory for production, first of all they need to be cleaned out. With the help of giant machine, that operates many airstreams, seeds are firstly separated from small wooden parts, little rocks and dust that could have got into the harvest from the field. Then several more large machines clean out the seeds from their hulls, shucks it and blows out the husk. After all of these cleaning procedures are done, we receive all equal nice beige sunflower seeds, hulled and peeled.

There’s a lot of hull left, isn’t there?

The left over husk can be used as combustible for ovens, chimneys, caldrons or boilers.

One of the secrets of our factory is that we fry seeds on the real fire. Just as could do it at home, in the huge pans heated by burning hull, white seeds receive their fried golden color, unrepeatable taste and subtle flavor.

What’s next?

While the fried seeds are left to cool, the caramel is being prepared. Firstly, we mix sugar with molasses and receive sugar syrup. Then we put the soaproot extract into it and thoroughly knead the caramel, which looks like millions of silk threads.

What is that soap in my halva?

The soaproot extract is taken from the plant, called saponaria, commonly known as soapworts. When stirring, it creates foam. In order for halva to receive its fibrous composition, this organic foaming agent is used.

The main ingredient

Fried sunflower seeds are then grinded into smooth mass, which is also called protein mass. It is a rich source of protein, vitamins B, D, E, F and a vast amount of good minerals.

The other pride of our factory is our grinding machine. Its shaft is made of natural stone, which allows seeds to save their healthy components and protects them from oxidation.

Just like weaving handicraft

When all of the ingredients are ready, caramel and protein mass are mixed together. This job is done manually very careful in order not to damage the delicate fibres of caramel. By virtue of this, the finished halvah has its consistence: it’s fibrous, delicate and soft, and at the same time it is melting in your month.

Almost ready

After mixing, the halva is poured into shapes, cooled at the temperature of 18±3°С, the it’s packed and sent to its destination.
